We just got back from Las Vegas and since someone has posted a bad review for Hugo's cellar I thought I'd best renew my opinion. Nothing has changed as far as I can tell. Everything was perfect. This is one of the best restuarants in Las Vegas, we have never had a bad experience here. And compared to some of the better restaurants like Andre's, Michael's etc. the value is much better. Just be sure to make a reservation as it has become very popular. Enjoy!

We always stop at Hugo's. We love it. Our group was so into dinner we missed the first half of our show. If you have room for desert order off the menue ask for "creme' broulea my way". (scoop of vanilla bean ice cream on top)
As for the prior review everything changes over time.

I always make it a point to stop by Hugo's Cellar whenever I'm up here. It is fine dining near perfection. I thought it was a little pricey at first, but compared to other restaraunts it is a good value. The reason is the salad comes with your meal. They even bring a platter of chocolate dipped fruits after dinner, not to mention the mini sherbet cones to clear your palate before your main course arrives. This last trip my Uncle had the Chillean Sea bass cooked in a herb / butter sauce. He let me try a piece and it melted in my mouth. I usually order the Rack of Lamb which is out of this world but decided to try something different. I had the Scallops cooked in a lemon, butter, wine sauce. They were very generous with the amount of scallops. I was so stuffed, I had to pass on dessert. We both had underestimated the size of the salad. They make it right in front of you and there were about 10 different toppings to choose from. We had everything except for the anchovies. This salad was a meal in itself. Oh yea, I forgot to mention I ordered a mushroom cap appetizer filled with crabmeat and hollaindaise sauce. We used the leftover crabmeat mixture as a spread for the assorted breads and crackers that were provided. Everything tasted great. With a $55 bottle of Clos Du Bois Merlot the bill came out to $148. It was well worth it. Hugo's is the reason why I always enjoy my stay in Vegas. Win or lose.

This was a surprisingly huge disappointment. We wanted a nice, classic place downtown. A number of people recommended Hugo’s I expected classic and classy, good food and great service. I suggested my wife wear one of her nicer dresses and I wore a sport jacket. Unfortunately, I felt the staf was just going through the motions.
Yes my wife got the rose at the door. But we were led to a booth in a noisy and hectic room. Next to us was a table of 3 guys and one woman – the men all in jeans and T-shirts and two wearing baseball caps. Very few men wore jackets and the women were mostly dressed casually at best.
Our table was set for four, and our first clue was after 10 minutes we asked the bus boy to take the other two place settings away. The service was both rushed inattentive. The waiter would stop by, very quickly take the order or drop something off, and disappear.
We ordered a bottle of white wine from the wine steward and asked what reds he had by the glass to have with our entrée later on since we were considering the prime rib. He suggested a nice cab. When we placed our order, my wife and I both changed our mind to veal. When the entrée was delivered, we tried to get the wine steward to talk to him about ordering a bottle of lighter red, but we could not get his attention. Finally we asked the waiter to send the wine steward to our table. Instead, the wine steward walked over to our table and deliver one glass of the cab – I guess my wife and I were to split it - and left before we could say anything to him. Very, very poor.
The highly anticipated salad was unimpressive. I do not think the waiter was at our table more than 60 seconds. He had no personality and he threw the ingredients into the bowl and dropped the salads on our table and left. Taste was OK, but I could imagine how it could have been done – and maybe how it used to be done when staff used to care.
Other problems: The intermezzo was literally served at the same time as the entrée! Water glasses were left empty too long and too often. The Veal Oscar was OK, although served with tired looking piece of crab leg instead of lump – unimpressive. The vegetables were cold.
So at a cost (including a bottle of wine and one glass of wine) of $160 - I would give Hugos a C-minus at best.

Excellent service! AND Food!! we were a group of 11 ordering the duck, scallops, rack of lamb, the food was superior-nothing negative from the th whole party!! the salad bar was served at the table was unique! unfortunately no one had the prime rib but oall the ohers entres and the desert were excellent!! try it!! you will love it!!

EAT HERE! When you do, order the Blue Cheese crusted filet. WOW! The jumbo shrimp cocktail was great although there were only 4 shrimp. (Portion control gone wild)
Returning in Feb 07. Already have reservations.

My husband and I and five friends dined at Hugo's for a special Valentine's dinner. The food was wonderful and the service was great, until towards the end. The waiters were very eager to refill the Arkansas spring water glasses but NEVER asked if the beer drinkers would like a 2nd beer or refilled the soda's. VERY DISAPPOINTED!
I should have known when the waiter took our order and wanted the ladies to order first that the bill might be a problem. Well, it was. He brought us the bill for $322 all on one ticket. There were 7 people, paying 4 separate ways. I asked him to separate our tickets because we were all paying cash and were having trouble figuring our share. He said, "It's too late! You can charge it and have everyone figure it later." If I was a hateful person who doesn't mind causing a scene I would have done so but instead we sat at the table and stressed out over splitting this bill up several ways. It ended up ruining the feeling of this wonderful dinner and made several of us pissed off when leaving the restaurant. Not a feeling I like having after paying $100 for dinner.
All in all, the food was delicious but feel like the servers were trying to get us out quickly. If you eat at Hugo's just make sure you ASK for SEPARATE TICKETS if needed and ALWAYS ASK FOR ANOTHER DRINK IF YOU WANT ONE!

Hugo's is the top for buttering up your better half,she will love the little touches,the rose,the dim lighting and the sickly smiling faces of the waiters.You go to have a good meal and score big brownie points.
The atmosphere is a 10 with entertainment value to be had from the salad cart "show",the British wine waiter,and some waiter is alwys happy to oblige the punters by setting fire to something at the table.
Here is the itinery for the evening.
Arrive in dimly lit cellar,wife gets a Rose,seated with a flourish,3 waiters come and do their thing and you know that there is romance in the air,soft drinks,wine.and water on the table,into the starter,snails was the choice.
Red hot and still bubbling these ones came with a pasty topping.Taste fine,not the best but OK.Clear the table and the salad cart comes to town 4 differnt dressings 9 different toppings,the waiter goes through the list and you select to taste.Salad come the way you want it so no complaints here.
I go for the steak it was OK,not great,just a steak.The other half for the fish it was good but not the best we have had.Too full for the desserts now but we had them waved under our noses to tempt us.Then out come the cocolate covered fruit to finish.
Job done,£130.00 including tip and wine for 2 not bad.
